Text shouldn’t be on its own. Put it into a span
element.
Change it to this:
<div id="one">
<div class="first"></div>
<span>"Hi I am text"</span>
<div class="second"></div>
<div class="third"></div>
</div>
$('#one span').text('Hi I am replace');
