I’ve used this technique from time to time:

<input type="hidden" name="the_checkbox" value="0" />
<input type="checkbox" name="the_checkbox" value="1" />

note: This gets interpreted differently in different server-side languages, so test and adjust if necessary. Thanks to SimonSimCity for the tip.
