Your first solution is possible, AngularJS allow to change the start/end symbols of text interpolation like this:

appModule.config(function($interpolateProvider) {
  $interpolateProvider.startSymbol('{[{');
  $interpolateProvider.endSymbol('}]}');
});

Then you could use it in your template:

<div>{[{message}]}</div>
