Or without ( and the need to escape it:

find . -not -name "*.exe" -not -name "*.dll"

and to also exclude the listing of directories

find . -not -name "*.exe" -not -name "*.dll" -not -type d

or in positive logic 😉

find . -not -name "*.exe" -not -name "*.dll" -type f
