You could use Mockito. I am not sure with PostConstruct specifically, but this generally works:

@Mock

// Testing instance, mocked `resource` should be injected here 
@InjectMocks
@Resource
private TestedClass testedClass;

@Before
public void setUp() throws Exception {
    // Initialize mocks created above
